What is Royal Icing?

A traditional icing made with egg whites and icing sugar.  The icing is built up in fine layers to create a near flawless finish.  It tastes delicious, and lends itself to all types of decoration, which are also created in royal icing.

 

Isn’t Royal Icing difficult to cut?

I add glycerine when I make the icing to ensure that the cakes cut beautifully.

  

Are your flowers really made of sugar?

Yes!  I pride myself on the quality of my flowers and all are individually hand made and hand coloured, often to match examples provided by a florist.  When made well, sugar flowers should be almost indistinguishable from fresh.

  

Why sugar flowers and not fresh? 

For freedom of design and the ability to use any flowers, at any time of year without the risk of wilting or poor quality.  In addition, sugar flowers make a wonderful keepsake of the day.  If kept dry, they will last indefinitely.

  

Do we have to have fruit cake?

Although fruit cake is traditional, (and mine are fed with brandy and matured for a minimum of three months) it’s your cake, so you can have almost any variety of cake you would like. 

  

How much do your cakes cost?

Everything I design is bespoke, and the cost is therefore entirely dependant on the complexity of the design and the amount of time required to make the cake.  A three tier cake with a simple spray of sugar flowers starts from £350, and we will discuss your design and budget at our initial no obligation meeting.

  

The cakes look very delicate - do you deliver and set up?

Yes - I will always personally set up your cake on your wedding day to ensure that it looks perfect.  There is no additional cost for this other than a mileage cost (free for local events).

  

How much do you charge for stand hire?

Nothing - it’s part of the service.

  

Who supplies your cakes?

All my cakes are baked to order by me in my North Wales farmhouse kitchen.  I only use fresh, quality ingredients, including organic butter and eggs - fully organic cakes are an option.  No cakes or ingredients are ever frozen.

  

How long before our wedding do we need to order?

Ideally a minimum of three months (required to mature fruit cakes) but I have produced cakes in less than two weeks!!  Dates can get booked extremely quickly, especially during the busy summer months.  Many of my commissions are booked in excess of twelve months in advance, and I do not double book, so once an order is taken, that date has gone.  I always advise to book as soon as you can to avoid disappointment.
